Description
Crispy and golden coconut shrimp made easily in your air fryer. A perfect appetizer or light meal.
Ingredients

 - 1 pound large shrimp, peeled and deveined
- 1 cup shredded sweetened coconut
- 1/2 cup panko breadcrumbs
- 1/4 cup all-purpose flour
- 2 large eggs, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions
- Pat the shrimp dry with paper towels.
- In a shallow dish, combine the shredded coconut and panko breadcrumbs.
- In another shallow dish, place the flour.
- In a third shallow dish, place the beaten eggs.
- Season the flour with salt and pepper.
- Dredge each shrimp first in the seasoned flour, shaking off excess.
- Dip the floured shrimp into the beaten eggs, letting excess drip off.
- Coat the shrimp thoroughly with the coconut-panko mixture, pressing gently to adhere.
- Preheat your air fryer to 390°F (200°C).
- Lightly spray the air fryer basket with cooking spray.
- Arrange the coated shrimp in a single layer in the air fryer basket, working in batches if necessary.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and cooked through.
- Serve immediately with your favorite dipping sauce.
Notes
- For extra crispiness, you can double-dip the shrimp: flour, egg, coconut-panko, egg, then coconut-panko again.
- Serve with sweet chili sauce, mango salsa, or a citrus aioli.
- Ensure shrimp are in a single layer for even cooking.
