Air Fryer Coconut Shrimp

Description

Crispy and golden coconut shrimp made easily in your air fryer. A perfect appetizer or light meal.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded sweetened coconut
  • 1/2 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Instructions

  1. Pat the shrimp dry with paper towels.
  2. In a shallow dish, combine the shredded coconut and panko breadcrumbs.
  3. In another shallow dish, place the flour.
  4. In a third shallow dish, place the beaten eggs.
  5. Season the flour with salt and pepper.
  6. Dredge each shrimp first in the seasoned flour, shaking off excess.
  7. Dip the floured shrimp into the beaten eggs, letting excess drip off.
  8. Coat the shrimp thoroughly with the coconut-panko mixture, pressing gently to adhere.
  9. Preheat your air fryer to 390°F (200°C).
  10. Lightly spray the air fryer basket with cooking spray.
  11. Arrange the coated shrimp in a single layer in the air fryer basket, working in batches if necessary.
  12. Air fry for 8-10 minutes, flipping halfway through, until golden brown and cooked through.
  13. Serve immediately with your favorite dipping sauce.

Notes

  • For extra crispiness, you can double-dip the shrimp: flour, egg, coconut-panko, egg, then coconut-panko again.
  • Serve with sweet chili sauce, mango salsa, or a citrus aioli.
  • Ensure shrimp are in a single layer for even cooking.
