A quick and flavorful steak recipe cooked in the air fryer, topped with a fresh, homemade chimichurri sauce.

- 1 lb steak (such as sirloin, New York strip, or ribeye), about 1-inch thick
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ cup fresh parsley, finely chopped
- ¼ cup fresh cilantro, finely chopped
- 2 cloves garlic, minced
- 2 tbsp red wine vinegar
- ¼ cup extra virgin olive oil
- ½ tsp dried oregano
- ¼ tsp red pepper flakes
- ¼ tsp salt
- ⅛ tsp black pepper
Instructions
- In a small bowl, combine the finely chopped parsley, cilantro, minced garlic, red wine vinegar, extra virgin olive oil, dried oregano, red pepper flakes, salt, and black pepper. Stir well. Let it sit at room temperature for at least 15-20 minutes.
- Pat the steak dry thoroughly with paper towels. Rub both sides of the steak with 1 tablespoon of olive oil, then season generously with ½ teaspoon of salt and ¼ teaspoon of black pepper.
- Preheat your air fryer to 400°F (200°C) for 5 minutes.
- Carefully place the seasoned steak in the air fryer basket in a single layer. Cook for 8-14 minutes, flipping halfway, depending on your desired doneness (Rare: 8-10 min, Medium-Rare: 10-12 min, Medium: 12-14 min). Use a meat thermometer for accuracy: 125-130°F for rare, 130-135°F for medium-rare, 135-140°F for medium.
- Remove the steak from the air fryer and transfer it to a cutting board. Let the steak rest for 5-10 minutes before slicing against the grain.
- Slice the steak and serve immediately, spooning the chimichurri sauce over the top.
