This baked oatmeal combines apples and cinnamon for a comforting breakfast. It is easy to prepare and serves as a balanced meal.
Ingredients

- 2 cups rolled oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 cup packed light brown sugar
- 2 cups milk (dairy or non-dairy)
- 1 large egg
- 2 tablespoons melted butter or coconut oil
- 1 teaspoon vanilla extract
- 1 large apple, peeled, cored, and diced
Instructions
- Preheat oven to 375°F (190°C). Grease an 8×8 inch baking dish.
- In a large bowl, combine oats, baking powder, cinnamon, salt, and brown sugar.
- In a separate bowl, whisk together milk, egg, melted butter or coconut oil, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until just combined. Fold in diced apple.
- Pour mixture into the prepared baking dish.
- Bake for 30-35 minutes, or until the top is golden brown and the oatmeal is set.
- Let cool slightly before serving.
Notes
- Add a handful of chopped nuts for extra crunch.
- Serve with a drizzle of maple syrup or honey.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
