  • Optional: 1/4 cup chopped walnuts or pecans for topping

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate bowl, combine the granulated sugar, brown sugar, vegetable oil, egg, vanilla extract, and buttermilk. Mix well.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the diced apples.
  6. Fill each muffin cup about 2/3 full. If desired, sprinkle the tops with chopped nuts.
