- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 1/2 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup peeled and diced apples
- Optional: 1/4 cup chopped walnuts or pecans for topping
Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In a separate bowl, combine the granulated sugar, brown sugar, vegetable oil, egg, vanilla extract, and buttermilk. Mix well.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the diced apples.
- Fill each muffin cup about 2/3 full. If desired, sprinkle the tops with chopped nuts.
- Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For extra flavor, toast the nuts before chopping and adding them to the topping.
- You can substitute applesauce for half of the oil in the recipe for a slightly healthier muffin.
- Store leftover muffins in an airtight container at room temperature for up to 3 days.
