Instructions

  1. Preheat oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
  2. Make the Crust: In a large bowl, cream together softened butter and 1/2 cup granulated sugar until light and fluffy. Stir in vanilla extract. Gradually add flour and salt, mixing until just combined. Press the dough evenly into the bottom of the prepared baking pan.
  3. Bake the crust for 15 minutes, or until lightly golden. Remove from oven and set aside.
  4. Prepare the Filling: In a large bowl, combine the diced apples, 1/4 cup granulated sugar, 1 tablespoon flour, 1 teaspoon cinnamon, nutmeg, and lemon juice. Toss gently to coat the apples evenly.
  5. Spread the apple filling evenly over the pre-baked crust.
  6. Make the Streusel Topping: In a medium bowl, combine 1/2 cup flour, oats, brown sugar, and 1/4 teaspoon cinnamon. Cut in cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  7. Sprinkle the streusel topping evenly over the apple filling.
  8. Bake for 30-35 minutes, or until the apples are tender and the streusel topping is golden brown. If the top starts to brown too quickly, cover it loosely with aluminum foil.
  9. Let the bars cool completely in the pan on a wire rack before cutting into squares. This will help them set and prevent crumbling.
