Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup peeled and diced apple

Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 cup cold butter, cut into small pieces
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, combine sugar, oil, pumpkin puree, eggs, and vanilla extract. Mix well.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Gently fold in the diced apple.
  6. Make the Streusel Topping: In a small bowl, combine flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  7. Fill each muffin liner about 2/3 full.
  8. Sprinkle streusel topping over each muffin.
  9. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For best results, use fresh, high-quality spices.
  • Store muffins in an airtight container at room temperature.
  • You can substitute the vegetable oil with melted coconut oil for a different flavor.
  • Add chopped nuts to the streusel topping for extra crunch.
