Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt.
- In a separate bowl, combine sugar, oil, pumpkin puree, eggs, and vanilla extract. Mix well.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Gently fold in the diced apple.
- Make the Streusel Topping: In a small bowl, combine flour, brown sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Fill each muffin liner about 2/3 full.
- Sprinkle streusel topping over each muffin.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
