Description

A straightforward recipe for making classic homemade bagels from scratch.

Ingredients

Scale
  • 1 ½ cups warm water (105-115°F)
  • 1 tablespoon granulated sugar
  • 2 ¼ teaspoons active dry yeast
  • 4 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1 tablespoon malt syrup or honey (optional, for boiling)
  • 1 egg, beaten (for egg wash)
  • Sesame seeds, poppy seeds, or everything bagel seasoning (for topping)

Instructions

  1. In a large bowl, combine the warm water and sugar. Sprinkle the yeast over the top and let it sit for 5-10 minutes until foamy.
  2. Add the flour and salt to the yeast mixture. Stir with a wooden spoon until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. Punch down the dough and divide it into 8 equal portions.
  6. Shape each portion into a ball, then poke a hole through the center with your finger and gently stretch it into a ring shape.
  7. Place the shaped bagels on a parchment-lined baking sheet, cover loosely with plastic wrap, and let them rest for 15-20 minutes.
  8. Preheat your oven to 400°F (200°C).
  9. Bring a large pot of water to a boil. Add the malt syrup or honey if using.
  10. Carefully drop 2-3 bagels at a time into the boiling water and boil for 1 minute per side.
  11. Remove the bagels from the water with a slotted spoon and place them back on the parchment-lined baking sheet.
  12. Brush the tops of the bagels with the beaten egg wash and sprinkle with your desired toppings.
  13. Bake for 20-25 minutes, or until golden brown and cooked through.
  14. Let cool on a wire rack before slicing and serving.

Notes

  • For chewier bagels, you can add a bit more malt syrup or honey to the boiling water.
  • If you don’t have malt syrup, honey or a pinch of sugar can be used.
  • Ensure your yeast is active for the dough to rise properly.
