Description

A simple and trendy pasta dish with baked feta cheese, tomatoes, and herbs.


Ingredients

  • 1 block (8 ounces) feta cheese
  • 1 pint cherry tomatoes
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 pound pasta
  • Fresh basil leaves for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a baking dish, place feta cheese, cherry tomatoes, and minced garlic.
  3. Drizzle with olive oil, and sprinkle with red pepper flakes, oregano, salt, and pepper.
  4. Bake for 30-35 minutes, or until tomatoes have burst and feta is softened.
  5. While the feta is baking, cook pasta according to package directions. Reserve 1/2 cup of pasta water before draining.
  6. Add cooked pasta to the baking dish with the feta and tomatoes. Stir well, adding pasta water as needed to create a creamy sauce.
  7. Garnish with fresh basil leaves and serve immediately.
