Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon active dry yeast
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 cup warm water or warm milk
  • Vegetable oil for deep frying

Instructions

  1. Combine flour, yeast, salt, and sugar in a large bowl.
  2. Gradually add warm water or milk, stirring until a sticky, soft dough forms.
  3. Cover and let dough rise in a warm place for 1 to 1.5 hours, until doubled.
  4. Heat 2-3 inches of vegetable oil in a deep pot to 350-375°F (175-190°C).
  5. Carefully drop spoonfuls of dough into the hot oil using two spoons.
  6. Fry for 2-3 minutes per side until golden brown and puffed.
  7. Remove uštipci and drain on paper towels.
  8. Serve warm with accompaniments like kaymak, ajvar, cheese, cured meats, olives, and fresh vegetables.

  • For a richer dough, use warm milk instead of water.
  • To test oil temperature, drop a small piece of dough; it should sizzle and float immediately.
