A traditional Balkan fried dough pastry, perfect for a hearty and flavorful breakfast.
Ingredients

- 2 cups all-purpose flour
- 1 teaspoon active dry yeast
- 1 teaspoon salt
- 1/2 teaspoon sugar
- 1 cup warm water or warm milk
- Vegetable oil for deep frying
Instructions
- Combine flour, yeast, salt, and sugar in a large bowl.
- Gradually add warm water or milk, stirring until a sticky, soft dough forms.
- Cover and let dough rise in a warm place for 1 to 1.5 hours, until doubled.
- Heat 2-3 inches of vegetable oil in a deep pot to 350-375°F (175-190°C).
- Carefully drop spoonfuls of dough into the hot oil using two spoons.
- Fry for 2-3 minutes per side until golden brown and puffed.
- Remove uštipci and drain on paper towels.
- Serve warm with accompaniments like kaymak, ajvar, cheese, cured meats, olives, and fresh vegetables.
Notes
- For a richer dough, use warm milk instead of water.
- To test oil temperature, drop a small piece of dough; it should sizzle and float immediately.
- Do not overcrowd the pot when frying.
