- 1 ½ cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 ¼ cups milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 4 tablespoons unsalted butter
- ½ cup packed light brown sugar
- ¼ teaspoon ground cinnamon
- ¼ cup dark rum (optional, can substitute with banana extract or more milk)
- 3–4 ripe bananas, sliced
- Vanilla ice cream or whipped cream for serving (optional)
Instructions
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In a separate medium bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
- Heat a lightly oiled griddle or large non-stick skillet over medium heat. Pour ¼ cup of batter per pancake onto the hot griddle. Cook for 2-3 minutes per side, or until golden brown and cooked through. Keep warm while you prepare the topping.
- To make the Bananas Foster topping: In a large skillet over medium heat, melt the 4 tablespoons of butter. Add the brown sugar and cinnamon, stirring until the sugar dissolves and the mixture is bubbly.
- Carefully add the rum (if using) and cook for 30 seconds, allowing any alcohol to cook off. Be cautious as the rum may ignite. (If not using rum, skip this step and proceed to the next).
- Add the sliced bananas to the skillet and cook for 1-2 minutes, gently turning them until they are heated through and coated in the caramel sauce.
- Serve the pancakes immediately, topped generously with the warm Bananas Foster sauce and caramelized bananas. Garnish with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
Notes
- For a non-alcoholic version, substitute banana extract or more milk for the rum.
