- 3 cups cooked rice, cold
- 2 tablespoons oil
- 1 cup cooked chicken, shredded
- 1/2 cup frozen peas and carrots
- 2 eggs, beaten
- 3 tablespoons Bang Bang sauce
- 1 tablespoon soy sauce
- 1/2 teaspoon sesame oil
- Green onions, sliced, for garnish
Instructions
- Heat oil in a large skillet or wok over medium-high heat.
- Add peas and carrots; stir-fry for 2 minutes.
- Push vegetables to one side. Pour beaten eggs into the empty side; scramble until cooked.
- Add cooked chicken and cold rice to the skillet. Break up any clumps of rice.
- Pour Bang Bang sauce, soy sauce, and sesame oil over the rice mixture.
- Stir everything together until well combined and heated through, about 3-5 minutes.
- Garnish with sliced green onions before serving.
Notes
- Using cold, day-old rice prevents the fried rice from becoming mushy.
- Adjust the amount of Bang Bang sauce to your spice preference.
- You can substitute chicken with shrimp, pork, or tofu.
