Description

Ingredients

  • 3 cups cooked rice, cold
  • 2 tablespoons oil
  • 1 cup cooked chicken, shredded
  • 1/2 cup frozen peas and carrots
  • 2 eggs, beaten
  • 3 tablespoons Bang Bang sauce
  • 1 tablespoon soy sauce
  • 1/2 teaspoon sesame oil
  • Green onions, sliced, for garnish

Instructions

  1. Heat oil in a large skillet or wok over medium-high heat.
  2. Add peas and carrots; stir-fry for 2 minutes.
  3. Push vegetables to one side. Pour beaten eggs into the empty side; scramble until cooked.
  4. Add cooked chicken and cold rice to the skillet. Break up any clumps of rice.
  5. Pour Bang Bang sauce, soy sauce, and sesame oil over the rice mixture.
  6. Stir everything together until well combined and heated through, about 3-5 minutes.
  7. Garnish with sliced green onions before serving.
