Easy-to-make BBQ chicken meatballs, perfect as an appetizer or main course.

- 1 lb ground chicken
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1 large egg
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup BBQ sauce
- 2 tbsp olive oil
- Fresh parsley, chopped (optional)
Instructions
- In a large bowl, combine ground chicken, breadcrumbs, onion, egg, garlic, smoked paprika, salt, and pepper. Mix until just combined.
- Form mixture into 1-inch meatballs (about 20-24).
- Heat olive oil in a large skillet over medium heat. Add meatballs and cook, turning occasionally, until browned and cooked through, about 8-10 minutes.
- Drain any excess grease.
- Pour BBQ sauce over meatballs, tossing gently to coat. Simmer for 5-7 minutes, allowing sauce to thicken.
- Garnish with parsley, if desired, and serve warm.
