- 1 pound dried black eyed peas
- 8 cups water
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 4 slices bacon, cooked and crumbled
Instructions
- Rinse black eyed peas and place in a large pot with water.
- Bring to a boil, then reduce heat and simmer for 1 hour, or until peas are tender.
- In a separate pan, sauté onion and garlic until softened.
- Add sautéed mixture, salt, pepper, and cayenne pepper to the pot with the peas.
- Simmer for another 30 minutes to allow flavors to meld.
- Stir in crumbled bacon before serving.
