- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted

- 16 ounces cream cheese, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ cup all-purpose flour
- For the Blueberry Topping:
- 2 cups fresh blueberries
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch (mixed with 1 tbsp cold water to form a slurry)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- Make the Crust: Combine graham cracker crumbs, ¼ cup sugar, and melted butter in a medium bowl. Press the mixture firmly into the bottom of the prepared baking pan. Bake for 10 minutes. Remove from oven and let cool slightly.
- Prepare the Cream Cheese Filling: Beat the softened cream cheese and ¾ cup sugar with an electric mixer until smooth and creamy in a large bowl. Beat in the eggs one at a time, then stir in the vanilla extract and flour until just combined. Pour the cream cheese mixture evenly over the cooled crust.
- Prepare the Blueberry Topping: Combine fresh blueberries, 2 tablespoons sugar, and lemon juice in a saucepan. Cook over medium heat, stirring occasionally, until the blueberries begin to break down and release their juices, about 5-7 minutes. Stir in the cornstarch slurry and cook for another 1-2 minutes until the sauce thickens. Remove from heat and let cool slightly.
- Assemble and Bake: Spoon the blueberry topping evenly over the cream cheese filling.
- Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly.
- Let the bars cool completely at room temperature, then refrigerate for at least 3-4 hours, or preferably overnight, before slicing and serving.
Notes
- For easier slicing, ensure the bars are completely chilled before cutting.
- You can substitute other berries like raspberries or blackberries for the blueberries.
