Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. Make the Crust: Combine graham cracker crumbs, ¼ cup sugar, and melted butter in a medium bowl. Press the mixture firmly into the bottom of the prepared baking pan. Bake for 10 minutes. Remove from oven and let cool slightly.
  3. Prepare the Cream Cheese Filling: Beat the softened cream cheese and ¾ cup sugar with an electric mixer until smooth and creamy in a large bowl. Beat in the eggs one at a time, then stir in the vanilla extract and flour until just combined. Pour the cream cheese mixture evenly over the cooled crust.
  4. Prepare the Blueberry Topping: Combine fresh blueberries, 2 tablespoons sugar, and lemon juice in a saucepan. Cook over medium heat, stirring occasionally, until the blueberries begin to break down and release their juices, about 5-7 minutes. Stir in the cornstarch slurry and cook for another 1-2 minutes until the sauce thickens. Remove from heat and let cool slightly.
  5. Assemble and Bake: Spoon the blueberry topping evenly over the cream cheese filling.
  6. Bake for 35-40 minutes, or until the edges are set and the center is slightly jiggly.
  7. Let the bars cool completely at room temperature, then refrigerate for at least 3-4 hours, or preferably overnight, before slicing and serving.
