- 1 lb ground beef (80/20 preferred)
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper to taste
- 8 large flour tortillas (10-inch)
- 2 cups shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
- 1/2 cup finely diced white onion
- 1/4 cup finely chopped dill pickles or relish
- 2 tbsp vegetable oil or butter, for cooking
- For the Special Sauce:
- 1/4 cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tsp pickle relish (optional)
- 1/2 tsp smoked paprika (optional)
Instructions
- Prepare the Special Sauce: In a small bowl, whisk together mayonnaise, ketchup, mustard, pickle relish (if using), and smoked paprika (if using). Set aside.
- Cook the Ground Beef: Heat a large skillet over medium-high heat. Add the ground beef, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess grease. Stir in garlic powder, onion powder, salt, and pepper. Cook for another minute, then remove from heat.
- Assemble the Quesadillas: Heat a separate large non-stick skillet or griddle over medium heat. Lightly brush the bottom of one flour tortilla with some of the special sauce. Place it sauce-side up in the hot skillet.
- Layer the Fillings: Sprinkle about 1/4 cup of shredded cheese evenly over the tortilla. Spoon about 1/4 cup of the cooked ground beef over the cheese. Sprinkle with some diced onion and chopped pickles. Add another 1/4 cup of shredded cheese on top of the fillings.
- Cook and Fold: Place a second tortilla on top of the fillings. Cook for 2-3 minutes, or until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla using a large spatula. Cook for another 2-3 minutes, until the second side is golden brown and the cheese is fully melted and gooey.
- Repeat and Serve: Remove the cooked quesadilla from the skillet and transfer to a cutting board. Repeat the process with the remaining tortillas and fillings. Once all quesadillas are cooked, slice each into wedges. Serve immediately with extra special sauce for dipping, if desired.
Notes
- For the Special Sauce, pickle relish and smoked paprika are optional but recommended for added flavor.
- You can use a mix of cheddar and Monterey Jack cheese for a different flavor profile.
