Ingredients

- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 2 tablespoons granulated sugar
- 1 large egg
- 1 ½ cups buttermilk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 ripe medium bananas, mashed
- Butter or oil for greasing the griddle
Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and granulated sugar.
- In a separate bowl, whisk the egg, buttermilk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Fold in the mashed bananas.
- Heat a lightly greased griddle or pan over medium heat. Pour about ¼ cup of batter for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and bubbles appear. Flip and cook for another 1-2 minutes.
- Serve with your favorite toppings.

- Do not overmix the batter; a few lumps are fine.
