Description

Ingredients

  • 1 pound pasta
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces feta cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions.
  2. While pasta cooks, caramelize onions: Heat olive oil in a large pan over medium heat. Add onions, salt, and pepper. Cook, stirring occasionally, until onions are deeply golden brown and caramelized (about 30-40 minutes).
  3. Drain pasta, reserving about 1/2 cup of pasta water.
  4. Add pasta to the pan with caramelized onions. Toss to combine. If the pasta seems dry, add a little pasta water.
  5. Stir in feta cheese.
  6. Serve immediately, garnished with fresh parsley.

Notes

  • For a richer flavor, add a knob of butter to the onions during the last few minutes of cooking.
  • Feel free to add a pinch of red pepper flakes for a little heat.
