A comforting pasta dish with sweet caramelized onions and salty feta cheese.
Ingredients

- 1 pound pasta
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8 ounces feta cheese, crumbled
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions.
- While pasta cooks, caramelize onions: Heat olive oil in a large pan over medium heat. Add onions, salt, and pepper. Cook, stirring occasionally, until onions are deeply golden brown and caramelized (about 30-40 minutes).
- Drain pasta, reserving about 1/2 cup of pasta water.
- Add pasta to the pan with caramelized onions. Toss to combine. If the pasta seems dry, add a little pasta water.
- Stir in feta cheese.
- Serve immediately, garnished with fresh parsley.
Notes
- For a richer flavor, add a knob of butter to the onions during the last few minutes of cooking.
- Feel free to add a pinch of red pepper flakes for a little heat.
