Ingredients

- 4 cups shredded carrots (about 1 lb)
- 1 cup raisins
- 1/2 cup mayonnaise
- 1/4 cup milk (or buttermilk)
- 2 tablespoons granulated sugar
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon salt
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- In a large bowl, combine the shredded carrots and raisins.
- In a separate small bowl, whisk together the mayonnaise, milk, sugar, apple cider vinegar, and salt until smooth.
- Pour the dressing over the carrot and raisin mixture. Toss gently until everything is well coated.
- If using, stir in the chopped pecans or walnuts.
- Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld. Stir again before serving.
