Description

Ingredients

  • 4 cups shredded carrots (about 1 lb)
  • 1 cup raisins
  • 1/2 cup mayonnaise
  • 1/4 cup milk (or buttermilk)
  • 2 tablespoons granulated sugar
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. In a large bowl, combine the shredded carrots and raisins.
  2. In a separate small bowl, whisk together the mayonnaise, milk, sugar, apple cider vinegar, and salt until smooth.
  3. Pour the dressing over the carrot and raisin mixture. Toss gently until everything is well coated.
  4. If using, stir in the chopped pecans or walnuts.
  5. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld. Stir again before serving.
