  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 2 lbs russet potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tbsp unsalted butter
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add onion, carrots, and celery; cook until softened, about 5-7 minutes. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  3. Stir in minced garlic, then sprinkle flour over the meat and vegetables. Cook for 1 minute, stirring constantly. Pour in beef broth and Worcestershire sauce, then add frozen peas, corn, and dried thyme. Bring to a simmer, stirring occasionally, until the sauce thickens slightly. Season with salt and pepper to taste. If not using an oven-safe skillet, transfer the mixture to your prepared baking dish.
  4. While the filling is simmering, boil the quartered potatoes in a large pot of salted water until very tender, about 15-20 minutes. Drain well.
  5. Return potatoes to the pot. Add milk, butter, salt, and pepper. Mash until smooth. Stir in the shredded cheddar cheese until melted and fully incorporated.
  6. Evenly spread the mashed potato topping over the meat filling in the baking dish. You can use a fork to create decorative ridges on top.
  7. Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let stand for 10 minutes before serving.
