A comforting and classic shepherd’s pie topped with creamy, cheesy mashed potatoes.

- 1 tbsp olive oil
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 lb ground beef or lamb
- 2 cloves garlic, minced
- 1 tbsp all-purpose flour
- 1 cup beef broth
- 1/2 cup frozen peas
- 1/2 cup frozen corn
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and black pepper to taste
- 2 lbs russet potatoes, peeled and quartered
- 1/2 cup milk
- 4 tbsp unsalted butter
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add onion, carrots, and celery; cook until softened, about 5-7 minutes. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease.
- Stir in minced garlic, then sprinkle flour over the meat and vegetables. Cook for 1 minute, stirring constantly. Pour in beef broth and Worcestershire sauce, then add frozen peas, corn, and dried thyme. Bring to a simmer, stirring occasionally, until the sauce thickens slightly. Season with salt and pepper to taste. If not using an oven-safe skillet, transfer the mixture to your prepared baking dish.
- While the filling is simmering, boil the quartered potatoes in a large pot of salted water until very tender, about 15-20 minutes. Drain well.
- Return potatoes to the pot. Add milk, butter, salt, and pepper. Mash until smooth. Stir in the shredded cheddar cheese until melted and fully incorporated.
- Evenly spread the mashed potato topping over the meat filling in the baking dish. You can use a fork to create decorative ridges on top.
- Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbly.
- Let stand for 10 minutes before serving.
Notes
- For a darker crust on the mashed potato topping, you can broil for the last 2-3 minutes, watching carefully to prevent burning.
