Ingredients

Scale
  • 4 bell peppers (any color), halved and seeded
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 (15 ounce) can diced tomatoes, drained
  • 1/2 cup ketchup
  • 1 tablespoon mustard
  • 1 cup shredded cheddar cheese
  • Optional toppings: chopped pickles, shredded lettuce, diced tomatoes

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown ground beef over medium-high heat. Drain any excess grease.
  3. Add onion and garlic to the skillet and cook until softened, about 5 minutes.
  4. Stir in salt, pepper, paprika, and garlic powder.
  5. Add diced tomatoes, ketchup, and mustard to the skillet. Simmer for 5 minutes.
  6. Arrange bell pepper halves in a baking dish.
  7. Spoon the beef mixture into each bell pepper half.
  8. Top with shredded cheddar cheese.
  9. Bake for 20-25 minutes, or until bell peppers are tender and cheese is melted and bubbly.
  10. Garnish with optional toppings such as pickles, lettuce, and diced tomatoes before serving.

Notes

  • For a spicier kick, add a pinch of red pepper flakes to the beef mixture.
  • You can use ground turkey or chicken instead of ground beef.
  • To meal prep, assemble the stuffed peppers ahead of time and store them in the refrigerator until ready to bake.
  • Customize your toppings with your favorite cheeseburger fixings.
