- 2 lbs ground beef (80/20 preference)
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 large egg
- 1/2 cup finely chopped onion
- 4 cloves garlic, minced
- 1/2 cup shredded cheddar cheese (or preferred melting cheese)
- 1/4 cup fresh parsley, chopped
- 1 tbsp Worcestershire sauce
- 1 tsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup ketchup (for glaze)
- 2 tbsp brown sugar (for glaze)
- 1 tsp yellow mustard (for glaze)
- 1 clove garlic, minced (for glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, shredded cheddar cheese, parsley, Worcestershire sauce, oregano, salt, and pepper. Mix until just combined; do not overmix.
- Form the meat mixture into a loaf shape and place it in a loaf pan or on a baking sheet.
- In a small bowl, whisk together the ketchup, brown sugar, mustard, and minced garlic for the glaze.
- Spread about half of the glaze over the top of the meatloaf.
- Bake for 60-70 minutes, or until the internal temperature reaches 160°F (71°C).
- During the last 10-15 minutes of baking, spread the remaining glaze over the meatloaf.
- Once baked, remove from the oven and let it rest for 10 minutes before slicing and serving.
Notes
- Do not overmix the meatloaf mixture to keep it tender.
- Let the meatloaf rest before slicing to retain juices.
