Description

Ingredients

  • 2 lbs ground beef (80/20 preference)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 1/2 cup finely chopped onion
  • 4 cloves garlic, minced
  • 1/2 cup shredded cheddar cheese (or preferred melting cheese)
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup ketchup (for glaze)
  • 2 tbsp brown sugar (for glaze)
  • 1 tsp yellow mustard (for glaze)
  • 1 clove garlic, minced (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, shredded cheddar cheese, parsley, Worcestershire sauce, oregano, salt, and pepper. Mix until just combined; do not overmix.
  3. Form the meat mixture into a loaf shape and place it in a loaf pan or on a baking sheet.
  4. In a small bowl, whisk together the ketchup, brown sugar, mustard, and minced garlic for the glaze.
  5. Spread about half of the glaze over the top of the meatloaf.
  6. Bake for 60-70 minutes, or until the internal temperature reaches 160°F (71°C).
  7. During the last 10-15 minutes of baking, spread the remaining glaze over the meatloaf.
  8. Once baked, remove from the oven and let it rest for 10 minutes before slicing and serving.

Notes

  • Do not overmix the meatloaf mixture to keep it tender.
  • Let the meatloaf rest before slicing to retain juices.
