These Chewy Maple Pumpkin Cookies are the perfect fall treat. Soft, chewy, and full of pumpkin and maple flavor, they’re easy to make and sure to be a hit.

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree
- 1/4 cup maple syrup
Instructions
- Preheat oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in egg and vanilla extract.
- Stir in pumpkin puree and maple syrup.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Drop by rounded tablespoons onto ungreased baking sheets.
- Bake for 10-12 minutes, or until edges are lightly golden.
- Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
- For extra flavor, add 1/2 cup chopped pecans or walnuts to the batter.
- Store cookies in an airtight container at room temperature for up to 3 days.
