Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and pumpkin puree.
  4. In a separate bowl, whisk together the flour, baking soda, cream of tartar, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. In a small bowl, mix together the sugar and cinnamon for the coating.
  7. Roll the dough into 1-inch balls, then roll each ball in the cinnamon-sugar mixture.
  8. Place the coated cookie dough balls onto ungreased baking sheets, leaving some space between each cookie.
  9. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  10. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
