A comforting and easy chicken noodle soup made in a slow cooker. Perfect for a hearty family meal.
Ingredients

- 2 pounds boneless, skinless chicken breasts or thighs
- 1 large onion, chopped
- 3 carrots, sliced
- 3 celery stalks, sliced
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup egg noodles
- 2 tablespoons chopped fresh parsley
Instructions
- Place chicken in the slow cooker.
- Add onion, carrots, and celery.
- Pour in chicken broth and add thyme and rosemary.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove chicken and shred it. Return shredded chicken to the slow cooker.
- Add egg noodles and cook for another 20-30 minutes, or until noodles are tender.
- Stir in fresh parsley before serving.
Notes
- For a creamier soup, stir in 1/2 cup of heavy cream or milk in the last 15 minutes of cooking.
- You can add other vegetables like peas or corn.
- Adjust seasoning to your preference.
- Use rotisserie chicken for an even quicker meal.
