Description

A comforting and easy chicken noodle soup made in a slow cooker. Perfect for a hearty family meal.


Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup egg noodles
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Place chicken in the slow cooker.
  2. Add onion, carrots, and celery.
  3. Pour in chicken broth and add thyme and rosemary.
  4. Season with salt and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Remove chicken and shred it. Return shredded chicken to the slow cooker.
  7. Add egg noodles and cook for another 20-30 minutes, or until noodles are tender.
  8. Stir in fresh parsley before serving.

Notes

  • For a creamier soup, stir in 1/2 cup of heavy cream or milk in the last 15 minutes of cooking.
