- 1 lb boneless, skinless chicken breasts
- 8 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 oz egg noodles
- Fresh parsley, chopped (for garnish)
Instructions
- Place chicken breasts in a large pot and cover with chicken broth.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until chicken is cooked through.
- Remove chicken from the pot and shred with two forks. Set aside.
- Add carrots, celery, and onion to the pot with the broth. Cook until vegetables are tender, about 5-7 minutes.
- Add minced garlic, thyme, salt, and pepper to the pot. Stir to combine.
- Bring the broth back to a boil and add egg noodles. Cook according to package directions, about 8-10 minutes.
- Return the shredded chicken to the pot and heat through.
- Garnish with fresh parsley before serving.

- For a richer flavor, use homemade chicken broth.
- Add other vegetables such as peas or corn for extra nutrients.
