Description

A fresh and flavorful pasta dish featuring chicken, ripe tomatoes, and aromatic basil, perfect for a quick weeknight dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 lb pasta (penne, farfalle, or spaghetti work well)
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 23 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 1 pint cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste
  • 1/4 cup chicken broth or pasta water for consistency (optional)

Instructions

  1. Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet or pot over medium heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add chopped onion to the same skillet and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
  4. Stir in crushed tomatoes and halved cherry tomatoes. Bring to a simmer and cook for 5-7 minutes, allowing the flavors to meld and cherry tomatoes to soften slightly.
  5. Return cooked chicken to the skillet. Add cooked and drained pasta. Stir well to combine.
  6. Stir in fresh basil and Parmesan cheese. If the sauce is too thick, add a splash of reserved pasta water or chicken broth to reach desired consistency.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with extra fresh basil and Parmesan cheese, if desired.
