Description
A fresh and flavorful pasta dish featuring chicken, ripe tomatoes, and aromatic basil, perfect for a quick weeknight dinner.

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 lb pasta (penne, farfalle, or spaghetti work well)
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2–3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 1 pint cherry tomatoes, halved
- 1/2 cup fresh basil leaves, chopped
- 1/4 cup grated Parmesan cheese, plus more for serving
- Salt and black pepper to taste
- 1/4 cup chicken broth or pasta water for consistency (optional)
Instructions
- Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
- While pasta cooks, heat olive oil in a large skillet or pot over medium heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add chopped onion to the same skillet and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
- Stir in crushed tomatoes and halved cherry tomatoes. Bring to a simmer and cook for 5-7 minutes, allowing the flavors to meld and cherry tomatoes to soften slightly.
- Return cooked chicken to the skillet. Add cooked and drained pasta. Stir well to combine.
- Stir in fresh basil and Parmesan cheese. If the sauce is too thick, add a splash of reserved pasta water or chicken broth to reach desired consistency.
- Season with salt and black pepper to taste.
- Serve hot, garnished with extra fresh basil and Parmesan cheese, if desired.

- Adjust seasoning to your preference.
