- 1 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (10 oz) can Rotel diced tomatoes with green chilies, undrained
- 1 (15 oz) can black beans, rinsed and drained
- 1 (15 oz) can corn, drained
- 4 cups chicken broth
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper (optional)
- 2 cups cooked shredded chicken
- Salt and black pepper to taste
- Lime wedges, for serving
- Optional Toppings: Tortilla strips, shredded cheese, avocado, sour cream, fresh cilantro
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Stir in diced tomatoes, Rotel tomatoes, black beans, corn, chicken broth, chili powder, cumin, and cayenne pepper (if using). Bring the mixture to a simmer.
- Reduce heat to low, cover, and let it simmer for 15-20 minutes to allow the flavors to meld.
- Stir in the cooked shredded chicken and heat through for about 5 minutes.
- Season with salt and black pepper to taste.
- Ladle the soup into bowls. Serve hot with lime wedges and your favorite toppings like tortilla strips, shredded cheese, avocado, sour cream, and fresh cilantro.
