A savory grilled cheese sandwich featuring sharp cheddar cheese and tangy dill pickles on toasted sourdough bread.

- 2 slices sourdough or rustic bread
- 2–3 slices sharp cheddar cheese
- 4–6 thin slices dill pickles or gherkins
- 1 tablespoon unsalted butter, softened
- 1 teaspoon Dijon mustard (optional)
- Black pepper to taste
Instructions
- Butter one side of each bread slice. Spread Dijon mustard on the unbuttered side of one slice, if using.
- On the unbuttered side of one bread slice, layer half the cheese, then the pickle slices, then the remaining cheese.
- Top with the second bread slice, buttered side out.
- Heat a non-stick skillet over medium heat. Place the sandwich in the skillet.
- Cook for 3-5 minutes per side, until golden brown and the cheese is melted. Press gently with a spatula.
- Remove from skillet, let rest for one minute, slice, and serve. Sprinkle with black pepper if desired.
