  • 1/2 cup (113g) unsalted butter
  • 1 cup (200g) packed light brown sugar
  • 34 ripe but firm bananas, sliced 1/4-inch thick
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (240ml) buttermilk (or 1 cup milk + 1 tbsp lemon juice, let sit 5 mins)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. Make the topping: In a small saucepan, melt 1/2 cup butter over medium heat. Stir in brown sugar until dissolved. Pour this mixture evenly into the bottom of the prepared cake pan. Arrange banana slices in a single layer over the brown sugar mixture, slightly overlapping if necessary.
  3. Make the cake batter: In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. Set aside.
  4. In a large bowl, cream together 1/2 cup softened butter and granulated sugar with an electric mixer until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  6. Pour the cake batter gently and evenly over the banana slices in the pan.
  7. Bake for 45-55 minutes, or until a wooden skewer inserted into the center of the cake comes out clean.
  8. Let the cake cool in the pan for 10-15 minutes on a wire rack.
  9. Place a serving plate upside down over the cake pan. Carefully invert the cake onto the plate, allowing the topping to fall onto the cake. If any bananas stick to the pan, gently scrape them out and place them back on the cake.
  10. Serve warm or at room temperature.
