Description

These no-bake bites offer a refreshing mint and chocolate flavor. They are easy to prepare and provide a quick energy boost.


Ingredients

Scale
  • 1 cup pitted Medjool dates
  • 1/2 cup raw cashews
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup protein powder (chocolate or vanilla)
  • 1/4 teaspoon peppermint extract
  • 2 tablespoons water (or as needed)
  • Pinch of salt
  • Optional: 2 tablespoons mini chocolate chips

Instructions

  1. Combine dates, cashews, cocoa powder, protein powder, peppermint extract, water, and salt in a food processor.
  2. Process until the mixture forms a sticky dough. If the mixture is too dry, add more water, one teaspoon at a time.
  3. Stir in mini chocolate chips if using.
  4. Roll the dough into 1-inch balls.
  5. Store the protein bites in an airtight container in the refrigerator for up to one week.
