- 1 cup pitted Medjool dates
- 1/2 cup raw cashews
- 1/4 cup unsweetened cocoa powder
- 1/4 cup protein powder (chocolate or vanilla)
- 1/4 teaspoon peppermint extract
- 2 tablespoons water (or as needed)
- Pinch of salt
- Optional: 2 tablespoons mini chocolate chips
Instructions
- Combine dates, cashews, cocoa powder, protein powder, peppermint extract, water, and salt in a food processor.
- Process until the mixture forms a sticky dough. If the mixture is too dry, add more water, one teaspoon at a time.
- Stir in mini chocolate chips if using.
- Roll the dough into 1-inch balls.
- Store the protein bites in an airtight container in the refrigerator for up to one week.
Notes
- For a stronger mint flavor, add an extra drop of peppermint extract.
- You can roll the finished bites in shredded coconut or extra cocoa powder for a different coating.
