Citrus Beet Salad

Description

A refreshing salad combining beets with citrus flavors.


Ingredients

Scale
  • 3 medium beets, roasted, peeled, and sliced or diced
  • 2 oranges, segmented
  • 1 grapefruit, segmented (optional)
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup toasted walnuts or pecans (optional)
  • 2 tablespoons fresh mint or dill, chopped
  • 4 cups mixed greens

Instructions

  1. Preheat oven to 400°F (200°C). Wrap beets in foil and roast for 45-60 minutes. Cool, peel, and cut.
  2. Remove peel and pith from oranges and grapefruit. Segment them over a bowl.
  3. Whisk together olive oil, orange juice, vinegar, Dijon mustard, honey/maple syrup, salt, and pepper.
  4. Combine beets, citrus, red onion, and mixed greens in a bowl. Add feta and nuts, if using.
  5. Drizzle vinaigrette over salad and toss. Garnish with mint or dill. Serve immediately.
