 - 1 pound large shrimp, peeled and deveined
- 1/2 cup shredded unsweetened coconut
- 1/2 cup panko breadcrumbs
- 1/4 cup all-purpose flour
- 1 large egg, beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a shallow dish, combine the shredded coconut and panko breadcrumbs.
- In another shallow dish, place the flour seasoned with salt and pepper.
- In a third shallow dish, whisk the egg.
- Pat the shrimp dry with paper towels.
- Dredge each shrimp first in the seasoned flour, shaking off any excess.
- Dip the floured shrimp into the beaten egg, ensuring it’s fully coated.
- Press the egg-coated shrimp into the coconut-panko mixture, coating evenly on all sides.
- Arrange the coated shrimp in a single layer in the air fryer basket. You may need to cook in batches.
- Lightly spray the shrimp with cooking spray for extra crispiness.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and cooked through.
- Serve immediately with your favorite dipping sauce.
