Description
Recreate the popular Texas Roadhouse Smothered Steak Skillet at home with this easy copycat recipe. This dish features tender, seared steaks smothered in a rich mushroom and onion gravy, topped with melted cheese.

- 2 (8-10 oz) sirloin or ribeye steaks
- 1 tbsp olive oil
- 2 tbsp unsalted butter, divided
- 1 large yellow onion, thinly sliced
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1 ½ cups beef broth
- 1 tbsp Worcestershire sauce
- ½ tsp dried thyme
- Salt and freshly ground black pepper, to taste
- 1 cup shredded Monterey Jack or Cheddar-Jack cheese
- Fresh parsley, chopped, for garnish
Instructions
- Pat the steaks dry and season generously with salt, pepper, and your preferred steak seasoning.
- Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering.
- Sear steaks for 3-4 minutes per side for medium-rare, or until desired doneness. Remove steaks from the skillet and set aside on a plate, tented with foil.
- Reduce heat to medium, add 1 tbsp of butter to the skillet.
- Add sliced onions and mushrooms, cooking until softened and lightly browned, about 8-10 minutes.
- Stir in the minced garlic and dried thyme, cooking for another minute until fragrant.
- Sprinkle the flour over the vegetables, stirring constantly for 1 minute to cook out the raw flour taste.
- Gradually whisk in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the skillet.
- Bring the mixture to a simmer, stirring occasionally, until the gravy thickens to your desired consistency.
- Taste and adjust seasoning as needed.
- Return the seared steaks to the skillet, nestling them into the gravy.
- Sprinkle the shredded cheese evenly over the steaks and vegetables.
- Place the skillet under a preheated broiler for 2-3 minutes, or until the cheese is melted and bubbly. Alternatively, cover the skillet with a lid for a few minutes until the cheese melts.
- Garnish with fresh chopped parsley before serving hot.
