Description
Simple casserole with cornbread, ground beef, and vegetables.

- 1 pound ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 (15 ounce) can corn, drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 packet cornbread mix
- 1 cup milk
- 2 eggs
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a large skillet over medium heat; drain excess grease.
- Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in corn, black beans, and diced tomatoes and green chilies.
- In a separate bowl, mix together cornbread mix, milk, and eggs.
- Pour the cornbread mixture over the beef and vegetable mixture in the skillet.
- Top with shredded cheddar cheese.
- Bake for 20-25 minutes, or until the cornbread is golden brown and a toothpick inserted into the center comes out clean.
- Let cool slightly before serving.
Notes
- Add a can of cream of mushroom soup for a creamier casserole.
- Use your favorite type of cheese.
