Description

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 (15 ounce) can corn, drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 packet cornbread mix
  • 1 cup milk
  • 2 eggs
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a large skillet. Drain excess grease.
  3. Add onion and bell pepper to the skillet and cook until softened.
  4. Stir in corn, black beans, and diced tomatoes.
  5. Prepare cornbread batter according to package directions, using milk and eggs.
  6. Pour the beef mixture into a baking dish.
  7. Pour cornbread batter over the beef mixture.
  8. Sprinkle cheddar cheese on top.
  9. Bake for 20-25 minutes, or until cornbread is golden brown.

Notes

  • For a spicier casserole, add a pinch of cayenne pepper to the beef mixture.
