Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15 ounce) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup plain yogurt
  • Salt to taste
  • Fresh cilantro, chopped, for garnish
  • Cooked basmati rice or naan, for serving

Instructions

  1. In a bowl, toss chicken pieces with 1/2 teaspoon garam masala, salt, and pepper.
  2. Heat butter and olive oil in a large skillet or pot over medium heat.
  3. Add chopped onion and cook until softened, about 5-7 minutes.
  4. Add minced garlic and grated ginger, cook for 1 minute until fragrant.
  5. Add remaining garam masala, cumin, paprika, turmeric, and cayenne pepper (if using). Stir and cook for 30 seconds.
  6. Add crushed tomatoes and bring to a simmer. Cook for 5 minutes.
  7. Add chicken pieces to the skillet. Stir to coat with the sauce.
  8. Bring to a simmer, then reduce heat, cover, and cook for 15-20 minutes, or until chicken is cooked through.
  9. Stir in heavy cream and yogurt until well combined and heated through. Do not boil.
  10. Season with salt to taste.
  11. Garnish with fresh cilantro and serve hot with basmati rice or naan.

Notes

  • For a spicier dish, add more cayenne pepper.
  • If you don’t have yogurt, you can omit it or use a bit more cream.
  • Marinating the chicken in yogurt and spices for at least 30 minutes can add extra flavor and tenderness.
