A rich and creamy Indian butter chicken recipe, perfect for a weeknight dinner or special occasion. This dish features tender chicken in a flavorful tomato-based sauce.

- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon garam masala
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional)
- 1 (15 ounce) can crushed tomatoes
- 1/2 cup heavy cream
- 1/4 cup plain yogurt
- Salt to taste
- Fresh cilantro, chopped, for garnish
- Cooked basmati rice or naan, for serving
Instructions
- In a bowl, toss chicken pieces with 1/2 teaspoon garam masala, salt, and pepper.
- Heat butter and olive oil in a large skillet or pot over medium heat.
- Add chopped onion and cook until softened, about 5-7 minutes.
- Add minced garlic and grated ginger, cook for 1 minute until fragrant.
- Add remaining garam masala, cumin, paprika, turmeric, and cayenne pepper (if using). Stir and cook for 30 seconds.
- Add crushed tomatoes and bring to a simmer. Cook for 5 minutes.
- Add chicken pieces to the skillet. Stir to coat with the sauce.
- Bring to a simmer, then reduce heat, cover, and cook for 15-20 minutes, or until chicken is cooked through.
- Stir in heavy cream and yogurt until well combined and heated through. Do not boil.
- Season with salt to taste.
- Garnish with fresh cilantro and serve hot with basmati rice or naan.
Notes
- For a spicier dish, add more cayenne pepper.
- If you don’t have yogurt, you can omit it or use a bit more cream.
- Marinating the chicken in yogurt and spices for at least 30 minutes can add extra flavor and tenderness.
