Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces fettuccine pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook fettuccine according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add minced garlic to the same skillet and cook until fragrant, about 1 minute.
  4. Pour in heavy cream and chicken broth. Bring to a simmer, stirring constantly.
  5. Reduce heat to low and stir in grated Parmesan cheese, salt, and pepper. Stir until cheese is melted and sauce is smooth.
  6. Return the cooked chicken to the skillet. Add the drained fettuccine.
  7. Toss everything together until the pasta and chicken are well coated with the sauce. If the sauce is too thick, add a little of the reserved pasta water until desired consistency is reached.
  8. Serve immediately, garnished with fresh parsley.
