  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 teaspoon salt, divided
  • ½ teaspoon black pepper, divided
  • 8 oz penne pasta
  • 1 tablespoon butter
  • 8 oz cremini mushrooms, sliced
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • ½ cup dry white wine or chicken broth
  • 1 ¾ cups chicken broth
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Season chicken cubes with ½ teaspoon salt and ¼ teaspoon pepper. Add chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
  2. While the chicken cooks, bring a large pot of salted water to a boil. Add penne pasta and cook according to package directions until al dente. Drain and set aside, reserving about ½ cup of the pasta water.
  3. In the same skillet, melt butter over medium heat. Add sliced mushrooms and cook, stirring occasionally, until softened and browned, about 5-7 minutes. Add chopped onion and cook until translucent, about 3-4 minutes. Stir in minced garlic and cook for another minute until fragrant.
  4. Pour in the white wine (or chicken broth) and scrape up any browned bits from the bottom of the pan. Let it simmer for 1-2 minutes until slightly reduced.
  5. Stir in the remaining 1 ¾ cups chicken broth and bring to a simmer. Reduce heat to low, stir in the heavy cream, remaining ½ teaspoon salt, and ¼ teaspoon pepper. Let it gently simmer for 3-5 minutes, allowing the sauce to thicken slightly.
  6. Return the cooked chicken to the skillet. Add the cooked and drained penne pasta and stir to combine, ensuring everything is coated in the creamy sauce. Stir in the ½ cup grated Parmesan cheese until melted and smooth. If the sauce is too thick, add a splash of reserved pasta water until desired consistency is reached.
  7. Serve immediately, garnished with fresh parsley and extra Parmesan cheese, if desired.
