- 1.5 lbs boneless, skinless chicken thighs
- 1 tbsp olive oil
- 8 oz cremini mushrooms, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tbsp all-purpose flour
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley, for garnish
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on both sides and cooked through (about 5-7 minutes per side). Remove chicken from skillet and set aside.
- Add mushrooms and onion to the skillet and cook until softened and lightly browned, about 5-7 minutes. Add garlic and cook for 1 minute more.
- Sprinkle flour over the mushroom mixture and cook for 1 minute, stirring constantly.
- Gradually whisk in chicken broth until smooth. Bring to a simmer, then stir in heavy cream and thyme. Season with salt and pepper to taste.
- Return chicken to the skillet and simmer in the sauce for 5-10 minutes, or until heated through and the sauce has thickened slightly.
- Garnish with fresh parsley before serving. Serve over rice, pasta, or mashed potatoes.

- For a richer flavor, use bone-in, skin-on chicken thighs.
- Add a splash of white wine to the sauce for extra depth.
