Description

This Creamy Mushroom Chicken recipe delivers a comforting and flavorful meal. It’s perfect for a weeknight dinner or a cozy weekend gathering. Enjoy tender chicken coated in a rich, creamy mushroom sauce.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 8 oz cremini mushrooms, sliced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp all-purpose flour
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley, for garnish

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on both sides and cooked through (about 5-7 minutes per side). Remove chicken from skillet and set aside.
  3. Add mushrooms and onion to the skillet and cook until softened and lightly browned, about 5-7 minutes. Add garlic and cook for 1 minute more.
  4. Sprinkle flour over the mushroom mixture and cook for 1 minute, stirring constantly.
  5. Gradually whisk in chicken broth until smooth. Bring to a simmer, then stir in heavy cream and thyme. Season with salt and pepper to taste.
  6. Return chicken to the skillet and simmer in the sauce for 5-10 minutes, or until heated through and the sauce has thickened slightly.
  7. Garnish with fresh parsley before serving. Serve over rice, pasta, or mashed potatoes.

Notes

  • For a richer flavor, use bone-in, skin-on chicken thighs.
  • Add a splash of white wine to the sauce for extra depth.
  • If the sauce is too thick, add a little more chicken broth.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
