- 1 medium delicata squash, seeded and cubed
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 4 cups vegetable broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh sage leaves for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss the cubed delicata squash with olive oil, salt, and pepper. Roast for 20-25 minutes, or until tender and slightly caramelized.
- While the squash is roasting, sauté the chopped onion and minced garlic in a large pot or Dutch oven over medium heat until softened.
- Add the orzo pasta to the pot and toast for 1-2 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes, or until the orzo is cooked and the broth is absorbed.
- Stir in the roasted delicata squash, heavy cream, and Parmesan cheese. Season with salt and pepper to taste.
- Garnish with fresh sage leaves (optional) and serve immediately.
