  • 1 tbsp olive oil
  • 1214 oz smoked sausage, sliced into rounds
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese, plus more for serving
  • Salt and black pepper to taste
  • ¼ cup fresh parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package directions until al dente. Drain and set aside, reserving about ½ cup of pasta water.
  2. While pasta is cooking, heat olive oil in a large skillet or Dutch oven over medium heat. Add the sliced smoked sausage and cook until lightly browned, about 5-7 minutes. Remove sausage from the skillet and set aside.
  3. Add the diced onion to the skillet and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Pour in the chicken broth, scraping any browned bits from the bottom of the pan. Bring to a simmer and cook for 2 minutes.
  5. Stir in the heavy cream and bring to a gentle simmer. Reduce heat to low and stir in the Parmesan cheese until melted and the sauce is smooth. Season with salt and black pepper to taste.
  6. Return the cooked sausage and drained pasta to the skillet with the sauce. Toss to combine, adding a splash of the reserved pasta water if the sauce is too thick.
  7. Serve hot, garnished with fresh chopped parsley and extra Parmesan cheese, if desired.
