A simple and comforting creamy smoked sausage pasta recipe, perfect for a weeknight dinner.

- 1 lb pasta (e.g., penne, fettuccine, rotini)
- 1 tbsp olive oil
- 12–14 oz smoked sausage, sliced into rounds
- 1 small yellow onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 ½ cups heavy cream
- ½ cup grated Parmesan cheese, plus more for serving
- Salt and black pepper to taste
- ¼ cup fresh parsley, chopped (for garnish)
Instructions
- Cook the pasta according to package directions until al dente. Drain and set aside, reserving about ½ cup of pasta water.
- While pasta is cooking, heat olive oil in a large skillet or Dutch oven over medium heat. Add the sliced smoked sausage and cook until lightly browned, about 5-7 minutes. Remove sausage from the skillet and set aside.
- Add the diced onion to the skillet and cook until softened, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.
- Pour in the chicken broth, scraping any browned bits from the bottom of the pan. Bring to a simmer and cook for 2 minutes.
- Stir in the heavy cream and bring to a gentle simmer. Reduce heat to low and stir in the Parmesan cheese until melted and the sauce is smooth. Season with salt and black pepper to taste.
- Return the cooked sausage and drained pasta to the skillet with the sauce. Toss to combine, adding a splash of the reserved pasta water if the sauce is too thick.
- Serve hot, garnished with fresh chopped parsley and extra Parmesan cheese, if desired.
