Description
This recipe makes tender chicken with a sweet and tangy pineapple BBQ sauce. It is easy to prepare in a slow cooker.

- 2 lbs boneless, skinless chicken breasts or thighs
- 1 (20 oz) can crushed pineapple, undrained
- 1 cup BBQ sauce
- 1/4 cup brown sugar, packed
- 2 tbsp apple cider vinegar
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper to taste
- Optional: Sliced green onions for garnish
Instructions
- Season the chicken with salt and pepper.
- In the slow cooker, combine the crushed pineapple (undrained), BBQ sauce, brown sugar, apple cider vinegar, garlic powder, and onion powder. Stir well.
- Add the seasoned chicken to the slow cooker, ensuring it is coated in the sauce.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
- Remove the chicken from the slow cooker and shred it using two forks.
- Return the shredded chicken to the slow cooker and stir it into the sauce.
- Serve warm over rice, in sandwiches, or with your favorite sides. Garnish with sliced green onions, if desired.
Notes
- Adjust the amount of brown sugar to your preference for sweetness.
- For a spicier kick, add a pinch of red pepper flakes to the sauce.
- This chicken is also great for meal prepping. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
