Instructions
- Season beef cubes with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Brown beef on all sides.
- Transfer browned beef to a 6-quart slow cooker.
- Add chopped onion, carrots, celery, and minced garlic to the slow cooker.
- In a small bowl, whisk together beef broth, diced tomatoes, thyme, and rosemary.
- Pour the liquid mixture over the beef and vegetables in the slow cooker.
- Cover and cook on low for 8-10 hours or on high for 4-5 hours, until beef is tender.
- About 30 minutes before serving, whisk together flour and a little water to make a slurry. Stir into the slow cooker to thicken the sauce.
- Season with additional salt and pepper if needed.
- Serve hot.
