Instructions
- Slice the cucumbers thinly.
- In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, sugar, minced garlic, grated ginger, and red pepper flakes if using.
- Add the sliced cucumbers to the dressing and toss to coat.
- Let the salad marinate for at least 15 minutes to allow the flavors to meld.
- Before serving, sprinkle with toasted sesame seeds and sliced green onions.

- For a crispier salad, you can salt the sliced cucumbers and let them sit for 15-20 minutes, then drain and pat them dry before dressing.
