Description

A healthier homemade alternative to Snickers bars, using dates for sweetness and a simple chocolate coating.


Ingredients

  • 1215 large Medjool dates, pitted
  • 1/2 cup creamy peanut butter
  • 1/4 cup roasted peanuts, roughly chopped
  • 1 cup semi-sweet or dark chocolate chips
  • 1 tablespoon coconut oil
  • Flaky sea salt, for garnish (optional)

Instructions

  1. Slice pitted dates lengthwise to create a pocket without cutting all the way through.
  2. Mix peanut butter with half of the chopped peanuts. Spoon this mixture into the center of each date and gently press the date closed.
  3. Place filled dates on a parchment-lined sheet and freeze for 10-15 minutes until firm.
  4. Melt chocolate chips and coconut oil in a microwave or double boiler until smooth.
  5. Dip each chilled date into the melted chocolate using a fork or toothpick, allowing excess to drip off.
  6. Return coated dates to the parchment-lined sheet. Sprinkle with remaining peanuts and sea salt, if using.
  7. Freeze or refrigerate for at least 15-20 minutes until the chocolate is set.
  8. Store in an airtight container in the refrigerator for up to a week.

Notes

  • If your dates are not pitted, carefully slice them lengthwise down one side and remove the pit.
  • You can use other nut butters like almond or cashew butter.
  • For easier dipping, ensure the filling is firm before coating in chocolate.
