Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 cup teriyaki sauce
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1/2 cup pineapple chunks, drained
  • 1/4 cup chopped green onions

Instructions

  1. Place chicken thighs in your crockpot.
  2. In a bowl, whisk together teriyaki sauce, soy sauce, brown sugar, cornstarch, ginger, and garlic.
  3. Pour the sauce mixture over the chicken.
  4. Add the pineapple chunks.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through.
  6. Shred the chicken with two forks directly in the crockpot.
  7. Stir in the green onions.
  8. Serve hot over rice.

Notes

  • For a thicker sauce, you can mix an additional teaspoon of cornstarch with a tablespoon of water and stir it into the crockpot during the last 30 minutes of cooking.
