Description
A simple and quick recipe for the classic Portuguese kale and potato soup, featuring smoky chouriço.
Ingredients

 - 1 tablespoon olive oil
- 1 pound chouriço sausage, sliced
- 1 large onion, chopped
- 4 cloves garlic, minced
- 8 cups chicken broth
- 2 pounds potatoes, peeled and cubed
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bunch kale, stems removed and thinly sliced
Instructions
- Heat olive oil in a large pot over medium heat. Add chouriço and cook until browned. Remove chouriço and set aside, leaving drippings in the pot.
- Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and add potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- Mash some of the potatoes against the side of the pot to thicken the soup slightly.
- Stir in the sliced kale and cook for 5 minutes, or until wilted.
- Return the cooked chouriço to the pot.
- Serve hot.
Notes
- For a vegetarian version, omit the chouriço and use vegetable broth.
- You can make this soup ahead of time and reheat it.
- Adjust salt and pepper to your taste.
