Easy Caldo Verde Soup

Description

A simple and quick recipe for the classic Portuguese kale and potato soup, featuring smoky chouriço.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound chouriço sausage, sliced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 2 pounds potatoes, peeled and cubed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bunch kale, stems removed and thinly sliced

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chouriço and cook until browned. Remove chouriço and set aside, leaving drippings in the pot.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in chicken broth and add potatoes, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  4. Mash some of the potatoes against the side of the pot to thicken the soup slightly.
  5. Stir in the sliced kale and cook for 5 minutes, or until wilted.
  6. Return the cooked chouriço to the pot.
  7. Serve hot.

Notes

  • For a vegetarian version, omit the chouriço and use vegetable broth.
  • You can make this soup ahead of time and reheat it.
  • Adjust salt and pepper to your taste.
