Description

This recipe makes a quick and flavorful garlic and herb chicken dinner.


Ingredients

  • 1 tbsp olive oil
  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese
  • ½ cup chicken broth
  • 2 tbsp chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces to the skillet. Season with salt and pepper.
  3. Cook chicken for 5-7 minutes, or until browned and cooked through. Remove chicken from skillet and set aside.
  4. Reduce heat to medium. Add Boursin cheese and chicken broth to the skillet. Stir until the cheese is melted and a smooth sauce forms.
  5. Return cooked chicken to the skillet. Toss to coat with the Boursin sauce.
  6. Garnish with fresh parsley before serving.

Notes

  • Serve this chicken with pasta, rice, or roasted vegetables.
  • For a richer sauce, use heavy cream instead of chicken broth.
