Description
This recipe makes a quick and flavorful garlic and herb chicken dinner.
Ingredients

- 1 tbsp olive oil
- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- ½ tsp salt
- ¼ tsp black pepper
- 1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese
- ½ cup chicken broth
- 2 tbsp chopped fresh parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces to the skillet. Season with salt and pepper.
- Cook chicken for 5-7 minutes, or until browned and cooked through. Remove chicken from skillet and set aside.
- Reduce heat to medium. Add Boursin cheese and chicken broth to the skillet. Stir until the cheese is melted and a smooth sauce forms.
- Return cooked chicken to the skillet. Toss to coat with the Boursin sauce.
- Garnish with fresh parsley before serving.
Notes
- Serve this chicken with pasta, rice, or roasted vegetables.
- For a richer sauce, use heavy cream instead of chicken broth.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
