Instructions
- Combine figs, sugar, lemon juice, and water in a large saucepan.
- Bring to a boil over medium-high heat, stirring occasionally.
- Reduce heat to low and simmer, stirring frequently, until figs have broken down and the mixture has thickened, about 45-60 minutes.
- Mash figs with a potato masher or fork for a smoother consistency, if desired.
- Stir in lemon zest, if using.
- Remove from heat and let cool slightly.
- Ladle hot jam into sterilized jars, leaving 1/4 inch headspace.
- Wipe rims clean and screw on lids.
- Process in a boiling water bath for 10 minutes, or until set.
