Description

A simple and hearty one-pot goulash recipe featuring ground beef and pasta, perfect for a weeknight meal.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1.5 lbs ground beef (80/20 lean)
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • 2 cups elbow macaroni, uncooked
  • Optional: shredded cheddar cheese for serving
  • Optional: fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large Dutch oven or large pot over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  2. Add the chopped onion to the pot with the beef and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Pour in the crushed tomatoes, tomato sauce, diced tomatoes (with their liquid), beef broth, and Worcestershire sauce. Stir in the Italian seasoning, salt, and pepper. Bring the mixture to a gentle boil.
  4. Reduce heat to medium-low, cover, and simmer for 15 minutes to allow the flavors to meld.
  5. Stir in the uncooked elbow macaroni. Cover the pot and continue to simmer for 15-20 minutes, or until the pasta is tender and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
  6. Taste and adjust seasonings as needed. If desired, stir in more salt or pepper.
  7. Ladle the goulash into bowls and serve hot, topped with shredded cheddar cheese and fresh parsley, if using.

Notes

  • This recipe is easily adaptable to different pasta shapes.
  • For a spicier goulash, add a pinch of red pepper flakes with the other seasonings.
