A simple and hearty one-pot goulash recipe featuring ground beef and pasta, perfect for a weeknight meal.

 - 1 tablespoon olive oil
- 1.5 lbs ground beef (80/20 lean)
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (15 ounce) can tomato sauce
- 1 (14.5 ounce) can diced tomatoes, undrained
- 4 cups beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon dried Italian seasoning
- 1 teaspoon salt, or to taste
- ½ teaspoon black pepper, or to taste
- 2 cups elbow macaroni, uncooked
- Optional: shredded cheddar cheese for serving
- Optional: fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large Dutch oven or large pot over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess grease.
- Add the chopped onion to the pot with the beef and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Pour in the crushed tomatoes, tomato sauce, diced tomatoes (with their liquid), beef broth, and Worcestershire sauce. Stir in the Italian seasoning, salt, and pepper. Bring the mixture to a gentle boil.
- Reduce heat to medium-low, cover, and simmer for 15 minutes to allow the flavors to meld.
- Stir in the uncooked elbow macaroni. Cover the pot and continue to simmer for 15-20 minutes, or until the pasta is tender and most of the liquid has been absorbed, stirring occasionally to prevent sticking.
- Taste and adjust seasonings as needed. If desired, stir in more salt or pepper.
- Ladle the goulash into bowls and serve hot, topped with shredded cheddar cheese and fresh parsley, if using.
Notes
- This recipe is easily adaptable to different pasta shapes.
- For a spicier goulash, add a pinch of red pepper flakes with the other seasonings.
